Ingredients

  • 300g all-purpose flour

  • 195g water

  • 60g active sourdough starter (100% hydration)

  • 6g fine sea salt

  • 10g olive oil

  • 1 tsp sugar or honey (optional)

  • 1 tbsp dried Italian herbs (or 2 tbsp finely chopped fresh herbs)

  • Optional: flaky salt or grated parmesan, for topping

Instructions

Mix and Autolyse
1. In a mixing bowl, combine flour and water. Stir until no dry flour remains. Cover and rest for 30 minutes.

Add Starter, Salt & Oil
2. Add the sourdough starter, salt, olive oil, herbs, and sugar (if using). Mix until fully incorporated and dough is soft and slightly tacky.

Bulk Fermentation
3. Cover and ferment at room temperature for 4–5 hours, performing 2–3 stretch and folds every 30–45 minutes.
4. Once dough is smooth and slightly puffy, refrigerate for 2–6 hours or overnight for extra flavor (optional).

Shape Breadsticks
5. Turn the dough out onto a floured surface. Divide into 12–16 equal pieces.
6. Roll each piece into a thin rope about 8–10 inches long.
7. Place on a parchment-lined baking sheet. Cover and let rest for 30 minutes while the oven preheats.

Bake
8. Preheat oven to 375°F / 190°C.
9. Brush breadsticks lightly with olive oil and sprinkle with flaky salt or parmesan if desired.
10. Bake for 18–22 minutes, or until golden brown and slightly crisp.
