Ingredients

  • 80g grated apple (peeled or unpeeled)

  • 40g shredded coconut

  • 40g raisins or dried cranberries

  • 40g chopped walnuts or pecans

Instructions

Mix the Dry Ingredients
1. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, and salt.

Combine Wet Ingredients
2. In a separate bowl, whisk together sourdough discard, eggs, brown sugar, oil, and vanilla until smooth.

Combine Wet and Dry
3. Pour the wet mixture into the dry and stir until just combined.
4. Fold in the grated carrot, apple, coconut, raisins, and nuts. Don’t overmix.

Rest the Batter (Optional)
5. For enhanced flavor and moisture, cover the batter and refrigerate overnight (8–12 hours).
6. If baking straight away, skip to the next step.

Bake
7. Preheat oven to 375°F / 190°C. Line a muffin tin with paper liners.
8. Divide batter evenly between the 12 cups.
9. Bake for 20–24 minutes, or until a toothpick inserted into the center comes out clean.
10. Let cool in the pan for 5 minutes, then transfer to a wire rack.
