  • 60g heavy cream or more milk

  • 1 tbsp granulated sugar

Instructions

Prepare the Custard
1. In a shallow dish or bowl, whisk together eggs, milk, cream, sugar, vanilla, cinnamon, and salt until smooth.

Soak the Bread
2. Lay sourdough slices in the custard mixture. Let soak for 30–60 seconds per side, depending on bread thickness.
3. Ensure the slices are well-saturated but not falling apart.

Cook the French Toast
4. Heat a skillet over medium heat and melt a knob of butter.
5. Add soaked slices to the pan and cook for 2–3 minutes per side, until deep golden and crisp at the edges.
6. If needed, keep cooked slices warm in a low oven while you finish the batch.

Serve
7. Plate with fresh berries, a dusting of powdered sugar, and a drizzle of maple syrup.

Visual Cues

  • The toast should be deeply golden on both sides with lightly crisp edges.

  • Inside should be tender and custard-like without being soggy.

Why This Works

Sourdough’s hearty structure and complex flavor stand up perfectly to the rich custard soak, turning humble leftovers into a luxurious brunch dish. The contrast between crisp crust and creamy interior is what makes this version unforgettable.
