Ingredients

Dough

  • 100g active sourdough starter

  • 450g bread flour

  • 8g fine sea salt

  • 200g whole milk

Filling

Instructions

Mix the Dough
1. In a stand mixer or large bowl, combine starter, flour, salt, milk, egg, and softened butter.
2. Mix until a shaggy dough forms, then rest for 15–20 minutes.
3. Knead until the dough becomes soft, smooth, and elastic — about 8–10 minutes.
4. Transfer to a greased bowl, cover, and bulk ferment for 4–6 hours at room temperature.
5. Once puffed, refrigerate overnight (12–24 hours) to develop flavor and firm the dough for easy shaping.

Prepare the Filling
6. In a small bowl, mix together cheese, herbs, and any optional seasonings. Set aside.

Roll, Fill & Slice
7. On a lightly floured surface, roll out the chilled dough into a rectangle (approx. 14x18”).
8. Spread a thin layer of softened butter across the surface.
9. Sprinkle the cheese and herb mixture evenly over the dough, leaving a small border along one long edge.
10. Roll up tightly from the opposite edge into a log.
11. Slice into 9 equal scrolls and arrange in a buttered or parchment-lined baking dish.
12. Cover and proof for 5–6 hours at warm room temperature, until puffy and nearly doubled.

Bake
13. Preheat oven to 375°F / 190°C.
14. Bake for 25–30 minutes until golden and bubbling at the edges.
15. Optional: Brush warm tops with melted butter or a little garlic-herb oil for extra flavor.

Visual Cues

  • Scrolls should be golden on top, with visible layers of melted cheese and flecks of green herbs.

  • When pulled apart, the crumb should be soft and tender, with cheesy spirals throughout.
